The story of Soo Long
In a good tea collection, an oolong must not be missing, and of course there is also one in premium quality from samova. The introduction in summer 2015 was particularly close to the samova founder's heart, because: Esin Rager does not tolerate caffeinated drinks very well and therefore likes to drink the mild oolong herself. The name Soo Long came to Esin simply as a play on words from this tea variety. Soo Long should be mild and digestible, but at the same time full of flavor and aroma.
Esin found a premium organic oolong tea that comes from Chiang Rai province in northern Thailand, not China or Taiwan, where most of these teas come from. The Thai tea gardens where the tea for Soo Long is grown are located at an altitude of 400 to 700 meters above sea level and are surrounded by ancient forests. The consistently warm temperatures and annual rainfall of at least 1700 liters per square meter make this area an ideal place for tea cultivation, which takes place there year-round. The result of these almost perfect climatic conditions is a soft but very aromatic oolong.
What exactly is an oolong? These teas are, so to speak, between green and black teas. The tea leaves are partially oxidized, sometimes to twenty, sometimes to forty or even to seventy percent. Depending on the degree of oxidation, they turn out greener or browner in color, both from the leaf and from the infusion.

The production process for oolong tea is a very special one: After picking, the tea leaves are spread out on stainless steel plates for about eight to twelve hours and dried before being roasted at 300 degrees for about a quarter of an hour. The tea is then rolled and grated at least 36 times in special machines. This gives it its unique round leaf shape. The remaining moisture is then removed from the tea leaves in a dryer at around 120 degrees.
Because oolong teas are offered almost exclusively as whole-leaf teas artfully rolled into balls, the British gave this particular variety the name "gunpowder." They recognized a similarity to the pellets of gunpowder.
Oolong teas can be poured loosely into the pot without a filter and develop their aroma slowly over several infusions. Soo Long can be described as a particularly mild variant, but still has a full-bodied taste. Hardly finished, you look forward to the next infusion.
