Salmon bagel with Wacken Nights tea
Hobenköök kitchen director Martin Schneider shows how to marinate fresh salmon with our organic black tea Wacken Nights. After just 24 hours, the salmon takes on a soft consistency reminiscent of sushi. Oriental spices give the salmon a particularly delicate flavor. It's worth trying!

Zest of one organic lemon
Preparation
How to do it
1. grind the ingredients thoroughly in a bowl or mix finely in a blender. Place in a mold for pickling. Then place the salmon in it and chill.
2. leave to marinate as follows, depending on your preference:
24 hours for a soft consistency reminiscent of sushi
36 hours for a firm but creamy consistency that can still be eaten in thicker slices
48 hours for the typical graved salmon texture, which can also be sliced wafer-thin
3. now slice down the salmon and top your bagel with cream cheese, salad and salmon.
